Delicious Beef Jerky and Vegetable Stew Recipe

This hearty stew of beef jerky, tomatoes, potatoes, and other vegetables is completely made with dehydrated ingredients, except for the optional fresh carrot. Dehydrating fresh food is a great way to preserve it and to ensure that you always ingredients on hand for easy homemade dinners that don’t require a trip to the store. Dehydrated or dried ingredients are also great adventurous home cooks who take their cooking skills on the road. Hikers and campers tend to find dry ingredients especially convenient as they are light, easy to carry, and not at risk of going bad before use. The stew is especially delicious served over cooked rice.


What You’ll Need :

4 cups water

1 cup dried tomato (about 20 slices/pieces)

1 cup beef jerky (1/2-inch chunks)*

1 cup potato (dried and peeled slices)

1 tablespoon bell pepper (dried pieces)

1 tablespoon onion (dried pieces)

1/2 teaspoon basil (dried)

1/2 teaspoon oregano (dried)

1/2 teaspoon garlic (dried)

Salt and pepper to taste

Optional: 1 fresh carrot (sliced)

1 cup short-grain rice (cooked and dried)


How to Make It:

01.  In a large saucepan, combine 3 cups of the water, tomatoes, beef jerky, potatoes, bell pepper, onion, basil, oregano, garlic, salt, and pepper. Allow to sit for 30 minutes to rehydrate.

02.  Once rehydrated, place the pan over medium heat and bring to a boil.​

03.  Add sliced fresh carrot, if using, and simmer for an additional 30 minutes to an hour, until jerky is tender.

04.  Meanwhile, combine rice with remaining water and bring to a boil. Remove from heat, cover, and let sit for 15 minutes to rehydrate. Then return to boil, partially cover, and simmer until rice is tender for about 15 to 30 minutes.

05.  Serve hot beef jerky stew over cooked rice for a hearty, satisfying meal.

*Note: While you can certainly use your favorite brand of store-bought jerky, we always prefer to make our own. Homemade beef jerky is all-natural and free of additives, food colorings, and preservatives. We love making this brined beef jerky for an extra tender and flavorful jerky. It’s so good that you’ll want to have some extra just to snack on!
